Herbs + Mayonnaise
When people tell me that they don't like mayonnaise, it makes me really sad.
It's the perfect addition to any sandwich. The base of a sauce that add a burst of flavor to any protein. Don't let the unnaturally white, almost jello-like consistency frighten you; with a few simple and fresh additions, it can elevate into something exquisite, becoming greater as a sum than all its parts apart. I recommend making a lot initially and just experiment throughout the week, tasting what it would pair well with.
Buy good mayo. Or better yet, make your own- it's only eggs and oil.
Ingredients:
2 cups mayonnaise (I used 1 cup normal mayo, 1 cup Japanese mayo)
2 large stalks of mint, sage, and parsley
1/2 lemon (grind and juice)
1 tsp cayenne pepper
3 tsp garlic powder (or 2 cloves of raw garlic mashed for a stronger taste)
Salt and pepper
2 tsp truffle oil
Chop all the herbs - mint, sage, and parsley.
Then, combine with that sweet, sweet mayonnaise(s). I use two different versions, but you can use just one if you’re in a pinch. I adore Japanese mayo, and would highly recommend the Kewpie brand. Find it at your local Asian grocery store, or if you are in Asia, your local grocery store.
Combine with the salt, pepper, cayenne, and garlic (I used garlic powder in this case.)
Shave the grinds off the lemon skin and when complete, hit it with that fresh lemon juice too. That zesty tang makes such a difference.
Give it a mix. Yum. I thought it looked so delicious at this point. But just as I thought it couldn’t get better…
It did. I remembered I had some white truffle oil that I brought back from my last trip to Barcelona. Truffle is truly delightful, but any other flavored oil (like garlic, chili, etc) would make a good substitute. Just a few teaspoons does the trick.
Serve on your favorite sandwich, use as a dipping sauce for fries, or anything you like!
